If you are interested in working with dry aged line caught local fish/charcuterie- galantines, head cheeses, fresh sausages etc... wood burning ovens/ nice olive oil/ homemade preserves/ teasing local famers about their mediocre produce/ menu specials that actually change daily/ neapolitan pizza... and working with a small team of dedicated cooks.
